Ingredients

½ cup sugar
½ cup brown sugar — firmly packed
½ cup butter — softened
½ cup peanut butter
1 teaspoon vanilla
1 egg
1 ¼ cups flour
1 teaspoon baking soda
½ teaspoon salt
4 teaspoons sugar

Makes 4 dozen cookies

Directions

  1. Preheat oven to 375°
  2. With an electric mixer beat together ½ cup sugar, brown sugar, and butter until fluffy. Add peanut butter, vanilla, and egg continuing to beat until ingredients are mixed well. Add flour, baking soda, and salt. Mix well.
  3. Form dough into 1″ round balls and place on cookie sheet spaced about 2″ apart. Dip a fork into the 4 teaspoons of sugar and flatten the balls making a crisscross pattern on the top of the cookie.
  4. Bake at 375° for 6 to 9 minutes and remove from cookie sheet to wire rack to cool.
