¾ cup sugar
¼ cup brown sugar — firmly packed
½ cup butter — softened
½ teaspoon vanilla
1 cup flour
½ teaspoon baking soda
¼ teaspoon cinnamon
¼ teaspoon salt
1 ½ cups oats, rolled (quick cooking)
½ cup raisins or chocolate covered raisins
- Heat oven to 375°
In a large bowl, combine sugar, brown sugar and butter. Beat until light and fluffy. Add vanilla and egg: blend well. Gradually add in flour, baking soda, cinnamon, salt and mix well. Stir in oats and raisins.
- Drop dough by rounded teaspoonfuls 2 inches apart onto cookie sheets.
- Bake at 375° for 7-10 minutes or until edges are light golden brown.
- Cool 1 minute: remove from cookie sheets.
