1 cup brown sugar — packed
¾ cup unsalted butter — softened
¼ teaspoon vanilla extract
¾ teaspoon maple extract
1 egg
1 ½ cups flour
¾ teaspoon baking powder
¾ teaspoon baking soda
¼ teaspoon salt
1 cup dates — finely chopped
½ cup pecans — chopped

Makes 5 dozen cookies


  1. Combine brown sugar and butter and beat with an electric mixer until light and fluffy. Add vanilla, maple extract and egg – blend well. Add flour, baking powder, baking soda and salt and mix well. Mix in dates and pecans. Cover with plastic wrap and refrigerate for 30 minutes.
  2. Heat oven to 350° F. Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheets.
  3. Bake at 350° F for 9 to 12 minutes or until light golden brown. Cool for 1 minute: remove from cookie sheet.
