½ cup sugar
½ cup brown sugar — firmly packed
½ cup butter — softened
½ cup peanut butter
1 teaspoon vanilla
1 egg
1 ¼ cups flour
1 teaspoon baking soda
½ teaspoon salt
½ cup sugar
Strawberry jam, jelly or preserves*

Makes 4 dozen cookies


  1. Preheat oven to 375°
  2. With an electric mixer beat together ½ cup sugar, brown sugar, and butter until fluffy. Add peanut butter, vanilla, and egg continuing to beat until ingredients are mixed well. Add flour, baking soda, and salt. Mix well.
  3. Form dough into 1″ round balls, roll in sugar and place on cookie sheet spaced about 1″ apart. With thumb or handle end of a spoon make an indentation in the center of each ball.
  4. Bake at 375° for 6 to 9 minutes and remove from cookie sheet to wire rack. Spoon ½ teaspoon of jelly, jam, or preserves into the center of each cookie.

*Strawberry jam is the favorite filling for this cookie. Experiment with other jams and jellies to provide an assortment.
