The Cake
2 cups sugar
2/3 cup vegetable oil
2 eggs
½ cup plain, full fat yogurt
½ cup cottage cheese
1 Tablespoon vanilla extract
2 cups all-purpose flour
1 Tablespoon baking powder

The Filling
¾ cup dried cranberries
2 Tablespoons orange juice
½ cup chopped walnuts


In mixer, combine sugar, oil, and eggs. In a blender, combine yogurt, cottage cheese, and vanilla until well mixed and smooth. Add this mixture to eggs, oil, and sugar in the mixer. Then add and mix in flour and baking powder.

In a sauté pan, bring orange juice to boil and add cranberries. Turn off heat and let sit until cooled, allowing the cranberries to absorb juice, stirring occasionally.

In a greased and floured bundt pan, pour in 2/3 of the mixture. Add filling evenly to bundt pan mixture. Add remainder of batter. Use a spatula to mix filling and batter in pan a bit more without touching the sides of the pan.

Bake at 350 degrees for 45-50 minutes or until a toothpick inserted into the cake comes out clean.
