Ingredients

The Cake
2 cups sugar
2/3 cup vegetable oil
2 eggs
½ cup plain, full fat yogurt
½ cup cottage cheese
1 Tablespoon lemon juice
1 Tablespoon vanilla extract
2 cups all-purpose flour
1 Tablespoon baking powder

The Filling
1 ½ cups toasted chopped, shelled pecans
1 Tablespoon ground cinnamon
¼ cup brown sugar

Directions

In mixer, combine sugar, oil, and eggs. In a blender, combine yogurt, cottage cheese, lemon juice and vanilla until well mixed and smooth. Add this mixture to eggs, oil, and sugar in the mixer. Then add and mix in flour and baking powder.

Add filling to a Ziploc bag and shake well.

In a greased and floured bundt pan, pour in 2/3 of the mixture. Add filling evenly to bundt pan mixture. Add remainder of batter. Use a spatula to mix filling and batter in pan a bit more.

Bake at 350 degrees for 45-50 minutes or until a toothpick inserted into the cake comes out clean.
